Add 1/4 cup shredded cheddar cheese, 1 cup cooked cold grits, 1 slice finely chopped ham, 2 dashes Zack’s Virgin Habanero Sauce
Mix and refrigerate 8 hours or overnight.
Saute in 1/4 cup vegetable oil-spoon in-cook over medium heat, 2-4 minutes per side. Don't burn!
Variation: Roll into little balls in Japanese or any seasoned bread crumbs before cooking.
Buerre Blanc Sauce
1/2 cup white wine
1 tbsp chopped shallot
2 to 3 tbsp sour cream
1 1/2 stick butter
Reduce wine, parsley and shallot to 1/2 over low heat, but don't burn. Add butter, stir until melted. Add sour cream and blend. Pour over grit fritters.
Variation: Add 1/4 cup small, chopped pieces of cooked country ham or fresh side bacon
