Grit Fritters

This tasty dish is great for parties or just for you. We use our famous Zack's Habanero Sauce just to give it a little kick.


  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • 3/4 tsp chives
  • 3/4 cup milk


  1. Add 1/4 cup shredded cheddar cheese, 1 cup cooked cold grits, 1 slice finely chopped ham, 2 dashes Zack’s Virgin Habanero Sauce
  2. Mix and refrigerate 8 hours or overnight.
  3. Saute in 1/4 cup vegetable oil-spoon in-cook over medium heat, 2-4 minutes per side. Don't burn!
  4. Variation: Roll into little balls in Japanese or any seasoned bread crumbs before cooking.
  5. Buerre Blanc Sauce
  6. 1/2 cup white wine
  7. parsley
  8. 1 tbsp chopped shallot
  9. 2 to 3 tbsp sour cream [10]1 1/2 stick butter [11]Reduce wine, parsley and shallot to 1/2 over low heat, but don't burn. Add butter, stir until melted. Add sour cream and blend. Pour over grit fritters. [11]Variation: Add 1/4 cup small, chopped pieces of cooked country ham or fresh side bacon
