BBQ and Smoking Baste

We have been using our famous Zack's baste in the Memphis In May BBQ Competition for years. This is great for meat, chicken, whole bologna, sausage and much more. We have incorporated some great flavors and we also use our famous Zack's Habanero Sauce.


  • 1 qt apple cider vinegar
  • 1 cup apple juice
  • 1 dark Heineken beer (or your preferred Dark beer)
  • 2 tbsp Molly McButter powder
  • 1 pack Sazon (Goya Sazon con Achiote y Azafron - available in any international food market)
  • 1 tbsp assorted whole peppercorns
  • 3 crushed, dried cayenne peppers
  • 2 lemons, sliced thin
  • 2 splashes Zack's Habanero Sauce
  • 4 tbsp brown sugar


  1. Bring mixture to a hard boil for 1 minute.
  2. Simmer for 15 minutes.
  3. Allow to cool to room temperature.
  4. Strain and pour ingredients in a large bottle for refrigerated storage when not in use.
  5. Use a spray bottle to baste meat, chicken, whole bologna, sausages, turkey or fish when smoking or bar-b-queing.
