Raspberry Chicken Lettuce Wrap

This tasty chicken recipe featuring Zack's Raspberry Jalapeno Sauce is served wrapped in a lettuce leaf.

  • 1 1/2 lbs. Chicken breasts
  • Salt and pepper to taste
  • 1/3 cup Zack's Raspberry Jalapeno Sauce
  • 1/2 cup Chicken stock
  • 1 Tbsp. Butter
  • 1/2 large Red onion, thinly sliced
  • Salt and pepper to taste
  • 2 Carrots, julienne, matchstick size
  • 1/2 cup Corn
  • 1/2 cup Black beans, rinsed
  • Whole iceberg lettuce leaves


  1. Preheat grill. Season chicken with salt and pepper. Grill chicken until desired doneness. Remove from grill and cool slightly. Or instead of grilling, roast chicken in 400 degrees F oven for about 30-35 minutes.
  2. Shred chicken using a fork. Add shredded chicken, Raspberry Jalapeno Sauce and chicken stock to sauté pan. Simmer over medium heat for 3-4 minutes.
  3. Heat butter in separate saute pan. Add onions to butter, season with salt and pepper and saute until caramelized. Add carrots, corn and black beans and cook another 1-2 minutes.
  4. Spoon chicken mixture in center towards one side of lettuce leaf. Fold over sides and roll to wrap chicken mixture up inside.
