- 1 1/2 pounds ground beef
- 1 TBSP Southern City Flavors Red Pepper Jelly
- 1 TBSP soy sauce
- 1 TBSP butter
- 2 cups Jasmine rice
- 3 garlic gloves
- salt & pepper
Peel & finely chop garlic and dice scallions
Melt 1 TBSP of butter in a pot over medium-high heat. Add in garlic and scallion whites. Cook, stirring until soft and fragrant (approx. 30 secs). Add rice, 4 cups of water and a pinch of salt to the same pot. Stir to mix up garlic and scallion. Bring pot to a boil, then cover and reduce heat to cook rice until tender (approx. 15 - 20 minutes. Once rice is done, fluff with a fork and season to taste with salt & pepper.
In a small bowl, combine 1 TBSP Red Pepper Jelly and soy sauce.
Heat a drizzle of oil in a pan over high heat. Add beef to pan, cooking until browned and cooked through. Stir in Red Peppery Jelly & soy sauce mixture until beef is coated and glazed with sauce (approx 1 - 2 min). Remove from heat and season with salt & pepper.
Add rice to bowls then top with beef. Sprinkle scallions on top of beef.
